My Happy Tilapia

Somebody said that “Fish to taste right, has to swim 3 times – in water, in butter and in wine”. I agree! Although in this case, I switched to healthier olive oil, this fish recipe is not going to disappoint you.

My Happy Tilapia
1-2 pieces of tilapia per person (or other white meat fish)
4 tomatoes (or diced tomatoes from can, drained)
1 green zucchini (thinly sliced)
1 cup of white wine
2 cloves of garlic finely minced
Olive oil
Lemon juice
Fresh parsley or basil (or both)
Salt and pepper

I personally love to make this dish because it‘s so easy, light and refreshing.You can either bake it all in larger dish for everybody or bake and serve each portions separate in individual dish.

Season each piece of tilapia with salt and pepper and drizzle little bit of lemon juice over the fish. Place in baking dish and garnish with 1 tablespoon of diced tomatoes, add minced garlic and fresh chopped herbs.

Carefully cover whole fish with thin slices of green zucchini and drip little bit of olive oil and white wine over the whole dish. Bake in oven until fish is tender and flaky (about 15-20 min.).

Wine pairing suggestion:
I picked lovely Hess Select Chardonnay from Monterey region of California, to match with this dish. Sauvignon Blanc would be a great choice also. Hess Chardonnay worked very well for us.
